I'm rather tired of eating soups/sandwiches everyday for lunch. I'm wondering if there are other recipes that can be made the night before where I can eat as a leftover for lunch with rice or perhaps something else that can be made early in the morning and won't spoil by lunchtime. Any suggestions, recipes, or links is greatly appreciated!

Substitute pita bread instead of loaf breads.
Find a italian style dressing you like, use that instead of mustard

Think outside the box:
Banana Nut Pancakes - use microwave pancakes, cut up banana and sprinkle pecans/walnuts, add on syrup (heated).

Chicken Salad - add in chicken, nuts, grapes, boiled egg, grated apple, sweet pickles, fat free mayo. Eat on crescent roll or with special crackers.

Large baking potato (bake at home, night before) - add in shredded cheese, bacon bits, margarine, heat up at work and mix it up real fluffy.

Spend alittle time in your grocery store - there are lots of unique dressings and sauces to change your salads; also flavored drinks that add to your day.

Good luck...

Whatever you fed yourself for supper the night before can be packed for dinner the next day, and those new cooked rice-in-a-bag thingys work great for a smaller portion. Uncle Ben's makes a great Wildrice, all ready to nuke and eat.
Meatloaf is a great lunch item and not always between two slices of bread. Pasta salad, pesto pasta, slice of garlic cheese toast, the world of food is only limited by your imagination.
Anyway, try sliced tomatoes and cottage cheese, Or fruit cups with melon and grapes and oranges.

Pasta salad (try the tuna, mayo, sweetcorn, or even just with pesto)

Tabbouleh (cracked wheat, cucumber, olives etc...)

Cold Spanish omelette (with potatoes).

I know what you mean, sandwiches get a bit boring after a while!
