Substitute pita bread instead of loaf breads.

Think outside the box:
Banana Nut Pancakes - use microwave pancakes, cut up banana and sprinkle pecans/walnuts, add on syrup (heated).
Chicken Salad - add in chicken, nuts, grapes, boiled egg, grated apple, sweet pickles, fat free mayo. Eat on crescent roll or with special crackers.
Large baking potato (bake at home, night before) - add in shredded cheese, bacon bits, margarine, heat up at work and mix it up real fluffy.
Spend alittle time in your grocery store - there are lots of unique dressings and sauces to change your salads; also flavored drinks that add to your day.

Whatever you fed yourself for supper the night before can be packed for dinner the next day, and those new cooked rice-in-a-bag thingys work great for a smaller portion. Uncle Ben's makes a great Wildrice, all ready to nuke and eat.

For a break from the traditional, try crackers and cheese, a handfull of grapes, yogurt one day. Or hummus and pita bread. Celery sticks with peanut butter, and raisins.
