This is my grandmother's recipe and I've never actually given it to anyone :)
My Nanna's Two Bowl Carrot Cake
First bowl:
1 1/2 cups sugar
1 cup vegetable oil
Beat that well... then add:
3 egg yolks (reserve whites for later)
2 1/2 tbsp. hot water
Second bowl:
1 cup carrots, grated
1 1/2 cups all-purpose flour
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp baking soda
1 tsp salt
1 tsp vanilla
Mix together contents of each bowl separately first... then together. Beat reserved egg whites until stiff. Fold into batter. Grease and flour tube pan. Pour batter into pan. Bake at 350 for 1 hour.
My nanna used to just make a glaze of confectioner's sugar and milk to pour over this cake... but I've also used cream cheese frosting :)
