Cinnamon ¿N' Spice Oatmeal Muffins
Makes 6 muffins
Prep: 20 minutes
Bake: 17 mins
Ingredients
2/3 cup all-purpose flour
1/2 cup rolled oats
1/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon salt
Dash ground cloves
1/3 cup milk
1 beaten egg
2 tablespoons cooking oil
1/2 teaspoon vanilla
1/4 cup chopped walnuts, pecans, or almonds
Directions
1. Grease six 2-1/2-inch muffin cups or line them with paper bake cups. Set muffin cups aside.
2. In a medium mixing bowl stir together the flour, rolled oats, sugar, baking powder, cinnamon, nutmeg, salt, and cloves. Make a well in the center of the dry ingredients.
3. In another bowl combine the milk, egg, oil, and vanilla. Add the liquid ingredients all at once to the dry ingredients. Stir just until moistened (batter should be lumpy). Fold walnuts, pecans, or almonds into the batter.
4. Spoon batter into prepared muffin cups, filling each 2/3 full. Bake in a 400 degree F oven for 17 to 20 minutes or until tops are golden. Remove from muffin cups and cool slightly on a wire rack. Serve warm. Makes 6 muffins.
Apple-Oatmeal Muffins: Prepare Cinnamon ¿N¿ Spice Oatmeal Muffins as directed above, except stir 1/3 cup shredded apple into the egg mixture and omit the nuts.
Menu Idea: Need breakfast in a hurry? Team these muffins with bowls of sliced peaches and strawberries and cups of coffee.

Blueberry Cream Muffins

"Rich and delicious blueberry muffins. The secret is the sour cream."
INGREDIENTS:
4 eggs
2 cups white sugar
1 cup vegetable oil
1 teaspoon vanilla extract
4 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
2 cups sour cream
2 cups blueberries
DIRECTIONS:
1. Preheat oven to 400 degrees F (200 degrees C). Grease 24 muffin cups or line with paper muffin liners.
2. In large bowl beat eggs, gradually add sugar while beating. Continue beating while slowly pouring in oil. Stir in vanilla. In a separate bowl, stir together flour, salt and baking soda.
3. Stir dry ingredients into egg mixture alternately with sour cream. Gently fold in blueberries. Scoop batter into prepared muffin cups.
4. Bake in preheated oven for 20 minutes.

This is my kids favorite, all of the ingredients are common here to Ghana, so the ginger is always fresh and spicy. Hope you like it.

Ginger Muffins with Streusel Topping
1 cup butter flavor shortening
1 cup sugar
1 cup waffle syrup (may use part molasses or combo with a strong honey like buckwheat, as long as it equals a cup)
3 eggs beaten
1 cup buttermilk (or use regular milk with a tablespoon of white vinegar in it)
1 3/4 tsp. baking soda
4 tsp. ground ginger
2 tsp. ground cinnamon
1 tsp. nutmeg
1/2 tsp. salt
3 cups flour
Streusel Topping
1/2 cup flour
4 Tbsp sugar
4 Tbsp cold butter or margarine (or butter flavor shortening)
Muffin how to: Cream shortening & sugar. Add eggs, one at a time. Add syrup, then milk with soda dissolved in it. Then add flour & spices. Spoon into greased muffin tin, or muffin tin with baking cups. Fill 3/4 full, then spoon on struesel topping.
Streusel Topping how to: mix all ingredients wel using your fingers until you've got largish lumps. Keep in the freezer between batches.
Bake at 375 degrees for 10-12 minutes.
Makes about 36 regular sized muffins.

Banana Nut Muffins:

2 over ripe bananas-smashed
2/3 c milk
5 tlbsp melted butter

1/2 c wheat germ-toasted
Preheat oven to 450; coat muffin pan with cooking spray-vegtable preferred;
Mix flour ,walnuts, wheat germ,brown sugar,baking soda,cinnamon,salt and nutmeg in large bowl,stir in bananas,milk, butter and egg, mix until blended;Using an ice cream scoop fill muffin pan evenely with batter and sprinkle with cinnamon; bake muffins untill toothpic poke in middle comes out clean 20 minutes,cool 1 minute then remove from muffin pan( makes 1 dz).10 minutes prep time-20minutes cooking time.

Banana Raisin Wheat Muffins
1 1/4 cups flour
1 Tblsp. baking powder
1/4 tsp. salt
1 cup Spoon Size Shredded
Wheat Cereal
1 cup fat free milk
1 egg
2 medium bananas, mashed (1 cup)
1/3 cup firmly packed brown sugar
2 Tblsps. margarine, melted
1/2 cup raisins,
Heat oven to 400 degrees F. Mix flour, baking powder, and salt in large bowl. Mix cereal and milk in another large bowl; let stand 5 minutes. Stir in egg, bananas, sugar and margarine. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in raisins. Spoon batter into muffin pan that has been sprayed with no stick cooking spray filling each cup 2/3 cup full. Bake 20 minutes or until golden brown. Serve warm. Makes 12 muffins.
