someone here must work in a deli .. what do you use to clean the things?

Most machines only have 2 parts that will dissasemble easily..
the blade guard (round and flat, lays ontop of the blade) and the meat guide (holds the meat down and guides it over the blade)
turn the machine off and unplug it
take off the guard and the guide and wash them in mild soapy water, rinse well and let them air dry
use clean water (no soap) to wash the entire machine...hold a rag under the blade and rotate it with your hand from the top to get all that is clinging to the blade
make sure to clean any crevices where meat has a chance to hide
wipe down with a diluted bleach solution and let air dry
reassemble

(to make cleaning easier we line the slicer with plastic wrap before using it)

Retail store and non-commercial deli slicers dissassemble easily, and all removable parts (except control panel) are dishwasher safe. Newer dishwashers have a sanitizing cycle. After running the parts through the dishwasher, immediately hand dry any wet spots left after the dry cycle is complete.

Hot soapy water. Nothing else because it'll contaminate the food afterwards. Then let it air dry.

steam clean it buy a SCUNCI STEAMER . I have one it works great. There used to be infamercials about them i dont know if there in stores.,but you can find them on the web (i think)
