how do you make a proper batter mix want to make toad in the hole but ive only used packet mix before help

Toad in the Hole
This is a popular dish in Northern England.

Serves 4.


- 1 pound sausages, un-smoked
- 1 1/2 tablespoons oil
- 1/2 cup flour
- 1/2 teaspoon salt
- 1 egg, beaten
- 1/4 cup milk
- 1/4 cup water
- Beef gravy


Pre-heat the oven to 425. Make a batter of the flour, salt, egg, milk
and water. Allow to sit 30 minutes. Add the oil and sausages to a
heavy oven-ready skillet. Brown in the oven, turning frequently. Pour
the batter into the hot pan and return to the oven. Bake for 40
minutes (or until well browned). Remove with a spatula and serve
topped with warm gravy.


FROG IN THE HOLE

4 slices of thick cut wheat bread
4 large eggs
4 vine-ripened tomatoes, sliced
1 medium red onion, sliced thin
12 slices smoked salmon
1 cup clarified butter
1-ounce olive oil
1-ounce red wine vinegar


Take each slice of bread and remove a hole two inches in diameter
from the center. A jelly jar lid works very well as a quick discard for
the center. Using a pancake griddle or a large Teflon pan, heat one
ounce of clarified butter over medium heat. Toast each slice of
bread on one side for three minutes. As you flip each slice of bread,
carefully crack an egg through the hole and sauté the egg inside.
When the egg sets on one side, but the yolk is still soft, turn the
toast over, careful not to crack the yolk. Sauté for an additional
two minutes. While the eggs are cooking, in a mixing bowl
season tomato slices and shaved onions with olive oil, red wine
vinegar, salt and pepper. For the presentation, stack tomatoes
and onions in one corner of the plate. Lean the frog in the hole
against the tomatoes and garnish with a rosette of three slices
of smoked salmon.

Firstly make sure that the oven is well hot enough, because if you haven't got it hot enough, it's just like putting roast meats in the oven when it is not warm enough so the meat starts to steam rather than roast.

Next put your oil into your tray that you use, then put tray into oven and really let them get warm before taking it out of the oven, when the oil is hot enough, put your mix into the tray and straight into the oven and cook for the time provided by your packet, don't open oven door until the time expires . to make a soggy batter, use equal amounts for a perfect batter i.e 1 cup of milk,
1 cup of flour,
1 cup of eggs
salt and pepper,
and watch it rise great for sunday roasts
to make it more soggy add a little more egg around a 1/4 of an egg more usually works

3 eggs
115g plain flour
1/2 pint milk
pinch salt

Beat all ingredients together.
set oven at 225deg c and heat oil in a baking tin until it is almost smoking. This is the secret of making a good pudding. Cook for about 25 mins or until it is golden brown.

Make the batter as thin as possible, ie use less flour and egg and get the cooking fat as hot as possible.
