The fullmetal alchemist songs are some of the best i have ever heard.

That's a bloody good question (I'm a fan of anime/ anime music, though I’m not into MP3s.:)
The cartoons shown on Arts Central have cool music:
Inuyasha - Good, mid-tempo J-pop that can be enjoyed by teens and young adults alike. Various artistes, including Hitomi, one of my faves. CD soundtrack is bloody expensive.
Cowboy Bebop - Possibly my fave when it comes to the music. Jazzy and lounge-like, sometimes hip and smart, sometimes moody.
One Piece - Ultra fast cartoon J-pop for both the intro and end titles.
Cyber Formula - Nice 80's styled guitar pop rock for intro and end titles.
Last Exile - Artsy, modern guitar pop-rock with nice vocals.
Teen Titans (O.K., not anime, but the theme is very anime-like and is sung by J-pop superstars, Puffy AmiYumi. Fast-paced cartoon pop-rock'n'roll)
I hope you are lucky enough to hunt down your anime collections. If anybody has seen any of the abovementioned soundtracks in Singapore, do let me know, ya?

The first Bleach opening is a great song. Actually, most of the Bleach music is great.
Lain also has great music, but most of it is acoustical / backround type music.
Most people I know agree that the best anime sound track is the one for the Hellsing TV series. There is a new Hellsing OAV series, but the music is not as good.

Pokemon soundtrack. They have pretty good melodies, meanings/morals and some tearjerking lyrics like The Time Has Come (Pikachu's Goodbye), some love songs like Misty's Song where she tell of how hard it is to admit your feelings to someone.. and lots more. They have good vocals too. :)
The Final Fantasy songs are good too. Eyes On Me, Real Emotion and more.
I highly recommend you listen to them.

Fullmetal Alchemist has the best songs. Especially the first opening "Melissa"
