How do you finish one?

I've always had trouble writing essays. Poems, short stories and other ways of writing is easy, but an essay is so hard. I write so many drafts and get frustrated. I can't think of supporting evidence, I can't make any references at all to the book, and I have trouble setting it in the right order of standard essay practice.

How can I write without getting stuck?

The whole point of an essay is that you have to think logically and present a solid argument based on facts. Funnily enough, your question is like a little essay. Your thesis is that you have trouble writing essays. Then you found supporting statements that describe why you have trouble writing essays (frustration b/c of drafts, can't find evidence, order...).

To make it more thorough, you would have to add evidence to back up your statements. In this case, you go by your experience. So for example, to support the drafts statement, you could say: 'Just last week, I wrote 5 drafts on an essay on... and ended up scrapping the entire thing. etc'. In the case of a book though, instead of your life experience, you would use events or facts from the point to prove the point. eg. If it were an essay on why essay writing was hard, and you made the point that many students get frustrated by constantly revising drafts, you could find some fact like '35% of students claim that rewriting drafts make them physically ill'.

And finally, to end it you would sum up the main point of what you said, and for extra points find some way that makes it relevant to a bigger picture. Eg. 'So as you can see, essay writing is difficult for many different reasons. Perhaps, schools should spend more time breaking down essay writing into it's basic components so students can become better at the variety of skills needed to master the skill of effective essay writing.'

Ta-da! Your essay is done. Just remember to stay focused on the thesis, and you should be ok. All you are trying to do is pull any facts and info from the text that proves your point.

It is a common trouble, you need to change your writing routine to make essay writing different. Change the place where you are writing, use different pen, listen to different music and so on. Sometimes you can allow yourself ordering your essay at Papers Gear, and after that repeat your attempts to change routine once again.

My method is to wait until the night before the essay is due, that way you won't have time to write a lot of drafts. You'll just hand up your first effort and as unsatisfied with it as you may be you'll almost always pass.
If you must write it properly, a good idea is to write what you want to first and look for references afterwards, perhaps by searching Google Scholar for articles which share your views. That way you save time researching. If there's a specific book you're meant to reference, look for a relevant definition and quote it in your introduction.

First you have to write about something that interest you. Unless you aren't given a choice.
You need to gather some facts on the topic. At least 3-5 topics. (usually 3 but it depends on the teacher). Then put them in order unless there is no need to order them. In the first paragraph write about what the topic is on. Then for each of the facts give them their own paragraph. Give some supporting sentences that support each of the facts you have. Then for the last paragraph make state again what the topic was/is your writing about then why you chose to write about it and such.
