How about directions for just standing/getting up from a chair? We did this in my Anthro class once and it's a little more challenging than you might think. Plus, you can draw stick figures.

Think of a task say cleaning windows, then go through the steps you need to clean them. Start off with, say, 1. Get a bucket, 2. Fill it with water, 3. Get a rag 4. stap ladders etc.etc. Just go through the steps for the task in your mind and write them down. Where a diagram would be better because a written explanation is too complicated then use a diagram and refer to it with the instructions. Best of luck.

Think of something you want to help explain first (ie putting hair curlers in your hair), then think step by step and describe each one. The diagram would be easy for this example; just draw a head with curlers being added , more in each diagram. you get the picture.
Good luck

Describe the process of making a peanut butter and jelly sandwich.

It is a simple process that everyone can do, but wait until you try to write the exact process with diagrams. It is not a easy as you might think.

Pick a familar task you do every day like playing a DVD (opening the case, removing the disk, opening the DVD player, etc. or brushing your teeth (Diagrams can show placing paste on the brush, how to brush etc.) and offer step-by-step details of the task.

The Peanut butter and Jelly Sandwich is a good one. Any Recipe will work. Myself, I think I would do one on how to properly not set an Alarm clock! Another good one maybe for a woman is; How to Thread a Sewing Machine.
