Check out the projects at http://www.sciencebase.com/science_fair_projects.asp. There are three projects there that involve water:

A SLICE OF ICE Does the shape of ice affect melting time?

A STRAIGHT FLUSH What is the "greenest", most biodegradable, toilet tissue?

A PINCH OF SALT Does adding salt change how quickly water boils?

Test out what brand of soap is most effective. The girls that did that got 100% on it; (proving to the teachers what brand is more effective than another is a very good type of science fair production. It shows which soap is stronger, and which is more weaker!)
Trust me on this one
(Teachers like the good 'fun' when put into a "science" project, it makes school seem less boring!!)

Try syphoning water. Adding polyethylene oxide (PEO) to the water changes the viscosity and makes a stunning demonstration. Once flow is started, a beaker of water/PEO will empty itself even after the beaker is returned to an upright position.
