Depending on what you count as the first email, it is either Richard W. Watson or Ray Tomlinson.
Richard W. Watson wrote a program to deliver files to remote printers, creating a 'Mail Box Protocol'.
Ray Tomlinson was the first to do 'real' email across a network (using the @ sign) in late 1971. More information on him can be found at:
