This seems to be the best article I could find on the subject:
http://www.infojustice.com/Tongue Diagnosis.html
There's an Amish healer who uses this method in Indiana, and his clients report successful treatment of ailments.
In fact, researchers at Carnegie Mellon University and the University of Pittsburgh Medical Center are conducting experiments regarding tongue diagnosis and colon cancer. Here's a link to the study: http://www.acupuncturetoday.com/archives2002/dec/12tongue.html
Might be worth checking into more deeply!

As a medical technologist, I have known that when a person has deficiency in Vitamin B12 and folate, the tongue will appear smooth rather than rough. Also, the oral cavity, being known as one of the most dirtiest port of entry in the body, is prone to infection, which may lead to cardiovascular diseases. The not-so-common tumor of the tongue can cause a significant increase in size. The gums and the tongue could also display strange growths in certain luekemias.

Doctors can tell alot by looking at your tongue and at other structures in your mouth. They are looking for the level of hydration, nutrition state, rashes, infections, organ function (mainly the liver).
