The technique he used to protect the bridge builder was the Water Clone Jutsu he swiped from Zabuza.
BTW, I looked this up on Wiki (I know, it's not always reliable) and only Naruto and Kakashi are listed as able to to the Multiple Shadow Clone Jutsu. The Shadow Clone Jutsu seems to be a much tamer version where only a few copies are made and it seems most Jounin already know this move.

I think Kakashi probably knew the technique cause when they were on the Naruto bridge he was too tired to use the Sharingan and made the clones himself !

He already knows about it when he became the member of Anbu because, I'm quite sure, that Kage Bunshin no Jutsu is a must for an Anbu member.

No he already now how to use it but not as much as Naruto because Naruto have a bigger amount of chakra.
