The peels have a higher percentage of vitamins and minerals.
I'm not sure why.

Well, when I was little ----- no, make that YOUNG, not little ----- my daddy used to tell me that the potato skin would make the hair on my chest grow. Well, the proof is in the pudding, isn't it? My daughter ate her potato skins too, and she is hairier on her chest then me!

i know the apple does, but i'm not sure about the tater?
and the pesticides can be washed off for the level 4 vegans to the 6'th power

Not all, but a good amount. Not to mention all the value from the fiber. People don't eat enough fiber and then get colon cancer when they're older. Eat your peel, people!

It has a lot of fiber and maybe some other vitamins. But the vegatble /fruit itself does too.

Yes! If its what holds the apple together and protect the inside...wouldnt it be the same for your body as well.
