Definitely the CIA (Culinary Institute of America). It's on the site of the old Christian Brothers Winery, so it is an absolutely beautiful location, elegant stone buildings, spectacular grounds. There are demonstration classes you can drop in on, usually in the mornings, and they usually publish their schedule a month or two in advance. They they also have a great gift shop, restaurant, and the biggest and most varied herb garden I have ever seen.
