This is because they have wool on them and wool does not shrink because it gets wet. It shrinks in the wash due to the agitation in the washing machine or if washed by hand by friction. the water and detergent only help the scales ride over each other.
Wool has an outer layer of scales which went agitated move out from the fibre and interlock. The material then takes up smaller area and presents a smoother harder surface and this appears as shrinkage.
