OK I choose Sultans of Swing out of your two choices.
It is a fine example of Mark Knoffler's style which I have always admired. This is probably one of my 10 ten favorite solos of all time. It clean and it sounds like he is flat picking (like "I know a little, Lynryrd Synyrd) but he didn't usually use a pick. He comes from the old school and demonstrated this well in his jams with Les Paul and Chet Atkins.

Neither. The best guitar solo in the world is the one in 'Layla' by Derick And The Dominoes (AKA, Eric Clapton) and it takes up the entire second half of the full length version of the song. But to be fair, it's only half guitar solo and half piano solo. It's still the best though.
A close second would be the guitar solo in 'While My guitar Gently Weeps' from The Beatles White Album. It's a George Harrison song, but he's not the soloist - once again, that credit goes to Eric Clapton.
You could also pick just about anything by Jimmy Page, but his guitar solos never seem to take over and stand out like with many rock or metal bands as Led Zeppelin always combined the solos with Robert Plant's vocals and John Bonham's drums to create an overall musical piece rather than a solo. Of course, the famous one is 'Stairway To Heaven' which IS magnificent, but also very over-rated when compared to some of their other stuff. Listen to 'Black Mountain Side' from Led Zeppelin I for a great example of one of Page's acoustic solos.

Toughy....
As a guitarist myself, I'd have to pick Sultans of Swing. Purely because it is finger picked which adds something a bit different.

GNR. I like Dire Straits, but I think Slash's style is far superior.
