It seems that when you are talking to a female you are concious that the listener is a female. Actually you are talking to her because she is female. So, how is she wrong in thinking that you are trying to chat her up?

I assume that you are a male. I am continually frustrated by male conversation because usually it lacks any emotional or meaningful substance, I like a laugh with the lads, but it can get a bit boring - I think it is because they seem to compete so much, whereas women tend to be more receptive - better listeners.
Sorry, I have just read the rest of your question, and I am afraid that you just sound a bit creepy.

honestly it depends on how you talk to them. I've had that problem several times. if you come of wrong toward them, then they may think you're something that you may not be. even if you are gay don't push the line to far because you may think they're your friend or some one to talk to but then they may feel uncomfertable being around you.

be yourself when talking to them. Be cool and dont scare them off. who knows........... someone might actually be interested in talking to you and not thinking you're trying to chat them up.
