How about doing a project on the effects of doing a senior project?

Create a survey to send out to every senior who graduated from your school in the last five years. You could measure the impact of the project on their lives. The interesting thing is to see what kind of relationships exist. For example, are there any relationships between:

The kind of project they did and the field they are going into.
The time spent on it & their grade
How they did on the project & the quality of their university
How important they thought it is and their success since leaving your school.

Maybe research about the country of your ancestors. I'm Irish, and I once did a project on how the struggle that ended up between the IRA and British government all began hundreds of years ago. Lots of people today have no clue why the English (actually most are Scottish) are in N. Ireland.

Oh yeah, maybe bring in food from that country for something fun. Guess potatoes aren't too much fun, except for fries.

I did my senior project on the similarities and differences between the Abrahamic religions and then I taught high school students in a small non diverse town about Islam.

I had a great time and learned a lot.
