Go west (about 20 mins from the strip) and go hiking in Red Rock Canyon! Great place to see, you'll get some beautiful pics out there as well. :)

You can Google Southern Nevada attractions to find better directions to these things, but there are some good suggestions here. Personally, I'd say you should see Hoover Dam (on the Colorado River at the NV/AZ border.) It's right on the main US Highway (93, I think) that goes from Las Vegas to AZ. Boulder City is a nice little town to stop and have lunch in on your way to or from the dam.
Red Rock Canyon is a Nevada State Park, and has a visitors' center. It's absolutely beautiful out there. In October, the weather should be fine for day hiking and such. Valley of Fire is similar, so you may only want to choose one of these, unless you're especially fond of red rock deserts.
If you like the Old West feel, there's always Calico Ghost Town in CA. It's about 90 min or so from LV. It's off I-15, the main road between LV and So Cal. That one should certainly show up on Google; just check under its name. It's commercialized, of course. If you prefer real ghosts, you can always go explore Rhyolite, NV. It's not far from LV.
If you have a particular interest, Google the Las Vegas area for your special interest. There's lots to do that has nothing to do with gaming.

Drive out to Red Rock Canyon ... there was just a big fire out there, but it will be open. It's a beautiful place see. Valley of Fire, Zion National Park, Oatman, AZ (where wild burros eat carrots out of the tourists hands), and Mount Charleston are all cool places that are a short drive from Las Vegas.

Head out to Lake Mead and go camping at the Echo Bay Campground or stay at the hotel and do some fishing or do some boating. That is what my famly always did when we were kids. Also on the Las Vegas Strip, there is a restaurant called the "Peppertree" you have to go there for a meal. They have the biggest meals for the right price...from what I remember.

Visit Hoover Dam, drive north on I-15 and visit the Valley of Fire, or go a bit farther north and visit Zion National Park. There is a ton of stuff to do here other than gamble. Check out the Street Experience on Fremont Street.

The Grand Canyon. If you can afford it go by helicopter (otherwise it's a 4 hour drive) and make sure the pilot is experienced enough to take you right inside the canyon. A fab experience.

Go to a show. I went to see Celine Dion and Circle Du Soleil - The latter was magical!! Not sure whats on at the moment but I'm sure your hotel will hook you up or try Ticketmaster - have a great time.
