Interesting question.
I would say that the answer to your question is everybody. What if no one heard it and then more trees fell until the Amazon forest was no more? If the tree fell and no one heard, what about the animals who are gradually losing losing their forestry?
Just some of my thoughts on this question.

The animals that lived in the tree are probably, quite reasonably, a bit pissed off. Then there's those the tree landed on, assuming they survived, oh.. and all the Philosophers who missed it.

the one who be hit, be droped on or who rely on food provid by the tree, also those ones who can make food out of the fall.....
and some "discovers" in many many years to come......
