The Dirty Dozen - Lee Marvin, Ernest Borgnine, Charles Bronson, George *snicker* Kennedy, Donald Sutherland, and Telly Suvalas
Ghostbusters - Dan Akroyd, Harold Raimis, Bill Murray, Sigourney Weaver, Rick Moranis, and Annie Potts
The Devil's Rain - Tom Skeritt, Ernest Borgnine, John Travolta, and William Shatner
McHale's Navy (1995 - 1996?) - Bruce Campbell, Tom Arnold, French Stewart, Ernest Borgnine (that man is everywhere!), David Allen Greir, Debra Messing, and Tim Curry
The Quick and the Dead - Sharon Stone, Gene Hackman, Leonardo DiCaprio, Lance Henrickson, Russle Crowe, Gary Sinese, and Pat Hingle. Lesser stars are Keith David (voice actor), and Bruce Campbell (scene cut).
McHale's Navy and The Devil's Rain are more of a B-list, but the names are big in their genres. Also note, Travolta is only in the movie for about 15 seconds as an extra.

You need to look back at some "old" movies or classics for "all star casts".
"How the West was Won" - Henry Fonda, Debbie Reynolds, James Stewart, Karl Malden, Eli Wallach, John Wayne, Walter Brennan and more
"The Longest Day" - John Wayne, Paul Anka, Richard Burton, Red Buttons, Sean Connery, Eddie Albert, Henry Fonda, Robert Mitchum and more
"American Graffiti" - Richard Dryefus, Ron Howard, Cindy Williams, Candy Clark, Harrison Ford and more
"Midway" - Eddie Albert, Henry Fonda, Glenn Ford, Robert Mitchum, Charleton Heston, Cliff Robertson and more
"The Great Escape" - Steve McQueen, James Garner, Charles Bronson, James Coburn and more
"J.F.K." - Kevin Costner, Tommy Lee Jones, Kevin Bacon, Jack Lemmon, Sissy Spacek, Joe Pesci and more
"Tombstone" - Kurt Russell, Sam Elliott, Charlton Heston, Val Kilmer, Jason Priestley, Dana Delany and more

Lucky youre not asking about great movies - I find that quite often a great all-star cast makes for a pretty shoddy film.
Some all-star lineups I can think of (that dont suck) are:
- Traffic
- Love Actually
- Meet The Fockers
