It will take some time to find the right options for you. Start with dove products, Ivory is another option and Oil of Olay seems to have some very good options as well.
My skin is extremely sensitive and I have to switch between dove, ivory and Oil of Olay's sensitive products for the shower. Try to stay away from fragances in products this is usually the problem. Try oepning a product and puting a small amount on the inside of your wrist and wait- walk around the store even go home and wait for a reaction if you need too.
If it begins to itch just skip it.
I've had some good luck with high end made to order products at bath stores where I can choose what goes into lotions, shampoos, body wash etc but it's a very pricey option just to get fragrances I like and that wont bother me. (they use natural oils, i.e. sandlewood etc)
Check the stores for 'travel' size products. You can save money and try products 2-5 times before it runs out before spending more on full size. You get to find out if it is safe for you or if after 2-3 times the red itchy rashes appear.
You can always buy essential oils in small bottles to add to your product to make it smell how you like it and in the end- no one else has that product and it's uniquely you!
On this same issue perfumes are a nightmare I have found only two that don't drive me insane or make me sick. But they also are fanastic and everyone compliments me on them and asks what they are because they are not a well known product. I think it is the fact nothing else competes with the scent that makes it so amazingly perfect for me.
Good Luck don't give up just keep trying till you find what is right for you and your skin.
One last tip- cetaphil is the best facial wash for senstive skin- non drying amazing clean soft skin. Moisturizer I use is a Mary Kay product- Oil control works like a charm and it's spf15! $16 a bottle last time I got it but one bottle lasts a full year and I wash my face 2-3 times a day and reapply the stuff.

I also do. When you shave, buy the Skintamate Sensative Skin Cream. When you wash your face/body. Use Oil of Olay products. Also, after showering use either Johnson & Johnson's Aloe Vera + Vitamin E Baby Oil or Neutrogena Sesame Oil All at Target. I use Oil of Olay Foaming Face Wash / Toner / and Moisturizer. Try sticking to one brand. If you have more than two brands it is causing irritation.
ALSO. If you have already tried that and it doesn't work.
Try using organic products. You can't really go wrong there.

My doctor put me on Dove soap about 25 years ago because I am allergic to lots of stuff. He says the Dove has no stuff that stays on your skin.

Just make sure EVERYTHING you use is hypoallergenic!!! Like your Lotions, Soap, Face Wash, Moisterizer and Make-Up. And try and get unscented products, because they tend to irritate your skin less.

In addition to the Dove soap, try Eucerin moisturizing lotion. It doesn't have any alcohol in it...and most lotions do!
