The technique to fix the scratches depends on the extent.
If the scratch is in a non-touched area, like on the side of a cabinet,
thn you can purchase dozens of wax-crayon like sticks that come in many colors that fill in the scratch. Some of these can be be over painted with different colours to blend an exact colour.
There is a entire range of special hard paints for counter top veneers and laminations, again, the cans can be mixed. You should wash the surfaces, clean, dry, and sand with very fine sandpaper to dull the surface lightly. The paints, unlike ordinary paints, stick very well and are quite durable..
You can just use colored magic markers for laminations that are
small and not in touched areas, like the corners of laminated shelves, or on sides. If the scratches show a whiter color underneath the lamination - for example a wood print, you can just use a similar brown marker, or two markers for the wood color, and a thin black marker for the grain.

If the scratches aren't too deep, try an Old English Scratch Remover stick or some Old English Polish. It pentrates the scratched area and most of the time the scratches just seem to disappear. You should be able to find it at any decent hardware or home center.

If the piece is painted, then sand out the scratches, and re-paint. You can take an iron and a damp cloth to draw the scratch out if it is deep. If the finish is natural, then try this first, and lightly sand the scratch with the grain until smooth, using a 220 grit or higher paper. I would then probably finish the piece with a couple applications with a wipe-on poly.
