Like i'll see people walk into her class from kinda far away and i'll see that she says hey and good morning, but she don't say it to me, and i'm her assistant. She's nice to me every other time. It would make my day if someone said that to me.

As you walk by, give a firm, "Good morning, Mrs. so & so, how are you today?" Speak clearly and look her in the eyes. She'll get the hint and start saying hello. Maybe she feels intimidated by you somehow...

It's very possible that she sees you so often and works with you (you said you are her assistant) that she doesn't see the need to spe cifically address you; or maybe she feels so close to you that she just assumes you know she has greeted you. I would follow the advice given by the other responder: Deliberately go out of your way to say hello to her; look her right in the eye and make sure you have her attention. Perhaps this will wake her up to the need to say hello to you. If this doesn't work after several days of trying, then, in a non-confrontational way, ask her if there is any reason she forgets to say hello to you first. Be gentle. I bet she never realized she was hurting you.

If I were you, I would ask her in a non-confrontational way to find out why. There might be a very simple explanation to it. One explanation might be that she sees you as a member of the faculty, and therefore sees you differently.
