We saw lots of feathers about but no blood... Also if you have any ideas on what did this, do you have any suggestions on how to capture, or kill this predator.

this is definitely one of the weasel family, mean little buggers
contact animal control about getting a trap to catch it

That's a fox. A cat would take the meat too. As for how to protect yourself... they can dig a little and are strong, so check your fences for gaps or holes. Traditionally foxes are shot rather than poisoned but I don't know what you have available. There are always snare traps but they're rather cruel.

A ferret. We had a bunny in a hutch outside our classroom. Next day....poor bunny. No head, little blood, only tiny size hole in chicken wire around hutch. The folks from Animal Protection told us a ferret can squeeze itself into a hole the size of a quarter. Their most likely culprit was a ferret.
