If I break the sound barrier, will we still be able to hear?

What kind of a breaking sound would that make?

Yes
At one time when a jet broke the sound barrier there was a "sonic boom" which sounded like a loud boom to the people on the ground the pilots could not here it.

If you do it within the confines of an aircraft yes but outside I think that all your senses would fail.
