Because she never actually stole the medallion from the chest. Thats how the curse works. If you steal from the chest, you'll be cursed. She stole it from Will, so she wasn't cursed, and Will wasn't cursed in the first place because it was sent to him by his father. I hope you follow me.
And Jack Sparrow got cursed towards the end of the movie because he took the gold from the chest, if you were paying attention.

The pirates were cursed. Since Will's dad was a member of the original crew,it could only effect a person of that bloodline. So even though Elizabeth had the coin,it didn't effect her since she wasn't related to Will.

It was a gaping plot hole.
The whole thing of why either Elizabeth or Will were never cursed was never suitably explained properly, nor how the cursed pirates were able to kill Will's father.

because she didnt take it from the chest with all the gold in it. she took it from will who was given it by his dad who was cursed.

i'm guessing that as she wasn't with the crew that stole the aztec gold in the first place she ain't cursed.

The same reason Will TURNER wasn't cursed.....cause neither of them took the gold, they were given it in one way or another......try paying attention next time you watch a film and you won't have to ask!!!!!!!!!!!!!!
