I did not recognize this quote so I did some searching.

Interestingly, it appears that this quote is one that gets attributed to the Talmud, but actually appears nowhere in the Talmud. That is, someone said it was in the Talmud at some point, and others repeated the reference without checking. So you will find this quote cited on the Internet in a number of places, and the source is just "The Talmud" with no tractate or other referencing.

I found an interesting discussion of the matter here: http://72.14.253.104/search?q=cache:L8Ycga6a18gJ:listserv.dom.edu/cgi-bin/wa.exe%3FA2%3Dind0403%26L%3Dstumpers-l%26O%3DA%26P%3D47092+Where+in+the+Talmud%3F+We+do+not+see+the+things+as+they+are+but+as+we+are+Talmud&hl=en&ct=clnk&cd=4
