You can easily do it in one day. I have driven straight through from Seattle to San Fran many times - as long as you leave at 5-6am to beat rush hour, you can get in to San Fran by 10pm ( if you take 1-5 all the way down).
For some good, centrally located and cheap lodging in San Fran, try the Mosser (you can look it up on Expedia). I stay there every time and it's fabulous.

For an easy and pleasant drive, where you can see a few sights along the way, 2 days. A good place to stay overnight would be Ashland, Oregon if you are taking I-5. You can also take a road from around that area to Highway 101, and go the rest of the way down the coast, which i would recommend if you like scenery, and stop to see the redwoods.

If you want to take highway 101 through both Oregon and California, then get off of I-5 at Kelso, WA, go to the oregon side, and take the road to Astoria, then down i-5. Stay the night in Yachats, OR, its a lovely quaint little town, about a half hour or so south of Newport.

If you are in a hurry and have two drivers, then head straight down I-5 and you could probably do it in 14 hours with a few stops for fuel, food, etc. Not recommended, but possible.

You can easily do it in two days, 8 hours each day or you could take your time and do it in 3 days. How long it takes really depends on what kind of traffic you hit in Seattle, Portland & San Fran...but it could take anywhere from 15-18 hours.

There aren't too many places to stay at the mid-point, Medford is a little far south & Eugene is a little far north.

823 miles, 11 hours 47 minutes. of course that is refueling while still moving. no food or restroom brakes and don't stop for red lights. traffic conditions will slow you down too. the best place to stay over. implies you are very rich. can't help there. I check out prices and try to get a good deal.

The stress is approximately 11 hours, each way, without site visitors, longer with site visitors or shape. Getting 2 babies to take a seat down in a motor vehicle for that long is the main complicated component to your plan.
