Why does this exclamation keep coming into my head, and where did I learn it from? Maybe I made it up.

Probably because you don't want to say s*** on a stick, which is an oft-used remark ( at least I know I use it as a remark).
Example- " He ain't worth s*** on a stick".

In the UK often seen in a finger buffet served by the unimaginative hostess - diced (cubed) cheese on a coctail stick - usually cheddar often with a bit of tinned pineapple on the stick as well - as a taste sensation it rates virtually 0 out of 10 - never heard it used as an exlclamation though

Very likely colloquial, (maybe the group that used it was very small, part of a family), but if I were to guess, I would say that "cheese" is euphemism for Jesus, morphed from "Jeez", and on a stick would represent the crucifixion. Therefore the entire phrase would be a "cleaned up" swear word/phrase.
Bet you heard someone say it frequently when you were very young, but who has not been in your life recently enough for you to recall.

there was an episode of monty pythons flying circus, where ther was a cheese shop that had no cheese, and in a last resort, the customer asked "cheese on a stick, do you have any cheese at all?" that may be it, but maybe not

Because you attended the Minnesota State Fair last week? It was DELICIOUS! I had swiss cheese on a stick and american cheese on a stick. PURE HEAVEN!!

I don't know, but i like to add "on a stick" to add emphasis to almost anything.
Cheese on a stick sounds delicious!
