Hella - 2 piece guitar and drum instrumental group, can be really fast and confusing but when they hit the melodic highs they blow your head clean off
Bubblemath - like Frank Zappa but even weirder.
Virus - norwegian avant garde aceness, melodic with raw guitar sounds
Made out of Babies - female singer who sounds a bit Bjork-ish at times, highlight is 'Mandatory Bedrest'
Preschool Tea Party Massacre - grinding thrash with techno beats put in and lots of movie samples - hilarious
Clutch - Chunky SOuthern Fried rawk like how skynyrd would be if they started today (imo - thats prob a rubbish descripyion)
I DOn't know if you only want new bands but here are some ones that rule and have been around for a long time...depends i you like growls and screams really.
AKERCOCKE - growly death metal played with style and precision
IRON MONKEY sludge doom core amazingness
The awesomeness that is VED BUENS ENDE.
ANyway I could go on...the best way I use to find new bands is to surf myspace following the friends list of bands you actually like...thats how i found some of the stuff above. Just realised I got no mainstream bands to compare them to...it's cos they can't be compared.

actual, the surely mainstream metallic band i'll imagine of is Metallica and that i surely like their older albums. i do not ideas Disturbed, device of a Down or Spineshank yet i do not evaluate them metallic. All Nu metallic is basically determination rock with metallic effect and is not any longer a subgenre of metallic. I also do delight in many of the mainstream metallic bands of the 70s and 80s yet i'd not call them mainstream anymore. BQ: Essence BQ2: Thrash BQ3: i know maximum persons might want to evaluate me an elitist, yet when someone is calling Nu metallic or Metalcore metallic, then i trust I might want to wish to perfect them.

i'm not sure exactly how underground they are, but crowbar is really good. they play slow, but heavy as hell and the singer's voice is like the freezing arctic wind. corrosion of conformity is a band that was very influential to a lot of the post-grunge/alternative metal bands in the late nineties, but for some reason never got big. wicker man is a band that is no longer around but i picked up their album for like three bucks at a used record shop. they deserve to still be around. as far as heavier stuff, what i do to find new bands is go to the website of a band i like, go to their links page, and look at the website of their record label. they have all the bands listed there and usually can tell you which of them are currently on tour.

Is Opeth mainstream? They are great and have one album which has no death metal voice. When they use the death metal voice, they sound like other groups that use it except that they play better.
Their mastery of the guitar is amazing.
Going back some, there was a group called TripmasterMonkey that could really rock and would be called metal, I believe.

what metal genre? in thrash, there's exodus, album shovel headed kill machine or tempo of the damned, kreator too, but all of their albums are good so i wouldn't recommend anything in particular. almost all black and death metal are underground. industrial and nu-metal, well, being industrial and nu itself make them mainstream already so, really can't be more of help
