I play by ear and it is not that you need to have a beat going on. The theme of the song you want to play is in your head and you can hear it and you can reproduce it perfectly. You cannot hear the chords, just the theme.

It is very hard to play by ear, it in general takes a specific tallent that you either have or you don't have.

If you truly wish to learn to play the piano and want to learn to do it corretly and properly, you need to take lessons and also learn music theory.

Try to listen to the bass part and the melody separately. If you can hear pitch well, you shouldn't have too hard of a time figuring out the key. If it's a song with vocals, try to play along with them to find out where you're at.
