yes, but eyesight wont change as much because you already use your eyesight a significant amount more than your other senses. if you were to lose your eyesight, your hearing and touch would have to compensate for the loss, (smell and taste to a lesser extent) since eyesight is probably the most used and important sense.

Yes, it does. I'm deaf. I have a photographic memory by sight and am very observant. I notice a lot of details visually. Plus I can sense sounds via my skin more even though I wear hearing aids regularly. Some people think that if I have no aids on, that they can crank the stereo up loud, but no, no, it is so annoying because I can feel it in my body. It needs to be at a manageable audio level.

not necessarily ! , its true that the brain can rewire its self end use new parts to analysis better the remaining sens , but usually the part of the brain that become free (because of the lose of the sens organ) will be used by the organ next to it (in the brain map)
but it is very likely that you will be more aware to the other senses

It does. The brain can rewire to use other parts to increase the ability of another sense. Hearing and touch sensitivity can increase for the blind through repeated use.

I wonder if maybe the other senses don't actually get better, you just pay more attention to what they're already telling you.
