Open the image...at the top select the filter tab>>>extract>>using the brush draw a line around the object you want to take out. Make sure the line goes completely around the subject leaving no breaks in the line. Select the fill tool ("bucket") and click the image inside the circle. It will turn blue or red. Hit OK....the subject will be by itself. Use the eraser to clean the image up>>>Crop the image to the smallest size that you can>>>hit the select all tab>>hit edit>>copy. Next open the new background image....using the selection tool(arrow) hit edit>>paste>>>the copied image will show up on top of the new;y opened image forming a new layer. Place the new layer where you want it on the pic. If it's too big or too small hit the edit>>free transform>>>and resize the layer. Once you are satisfied select the Layer tab>>>flatten image>>>Save as>> and save it under another name. When you close the original images used it will ask if you want to save the changes....SAY NO!! This way you won't screw up your original pictures.

what you want to do is open the picture up in photoshop, on the toolbar that has the list of tools, there will be a picture of a dotted square with an arrow (it will be in the top left of the pic) on it. press that (if there is a scroll button, press that and pick lasso tool).
now, outline the picture with the tool you are using. Do that by clicking when you are turning around corners if you are using the lasso tool. (suppose there is a circle, you will click on the edge when it is curving, and keep clicking until you meet the starting position again).
When you're done, click on the place where you started. After you are done with that, drag the thing you outlined out of the picture. It will come out in a new window, with no background. use the bucket tool to fill the background with the color of your choice!
it is a long process in words, but it takes a second once you are really doing it.

Select the layer (it will be the only layer at the time). Click and Drag that layer to the "add a layer" icon. You'll then have two copies of the original image. Hide one of the layers so you can work on the other one. You can use the laso tool to slowly trace around the part of the image you want to cut out. Once you've traced all the way around it, you can delete it, or "cut" it and "paste" it on a new layer. Then you can fill in the blank space however you want.

I've used photoshop since version 3.0, and now they are up to 9.0, and I love it!
