Two reasons: firstly, when your body is alerted to an apparently poisonous substance entering it (which it knows very quickly), the kidneys start to overact to flush poisons out of your body. For the same reason, once you have 'broken the seal' while out drinking, you continually need to pee (although this is a much milder 'poison' in the body's estimation).
