You'll notice a common thread to the better answers you're receiving: Put a substance on the soil that irritates a cats sensitive nose. The most reliable such substances are orange, lemon or other citrus peels, or pepper. These will also benefit your plants. I would advise again mothballs, as one person has suggested, as they contain chemicals harmful to plants, and will eventually be absorbed into the soil.

you can purchase some animal freindy repelants, alternativley a cheap method is to place some old CD's (i used some of the free internet ones from the supermarket!) or mirror around the garden this is meant to deter them. other ways are buckets of water thrown on them or a dog both not quite as nice to the cat!! good luck

I've answered this type of question before, and whilst it's not particularly, um, *nice* it really works.
Get a water spray bottle and fill it with your urine (really). When cat comes in garden, if you can, spray it. You've essentially marked it, and it won't come back. Works best on tomcats, and for some reason beter with male urine.

Place half empty bottles of water around the garden...The reflections spook the cats and the garden stays clear...Tried and tested by my Nan.

Go to your closest friendly safari park and ask if you can have some lion dung. Tends to scare the living daylights out of domestic moggies. Think I'm joking? No I'm not.
