Anything and everything fron FUNimation!
Dragon Ball Z ,Fullmetal Alchemist, YuYu Hakusho, Sprial, Fruits Basket, Blue Gender, Case Closed, Kiddy Grape and Lupin are my favorite from FUNimation.
VIZ is another really good production company - my favorite from them is InuYasha.
If you have a FRY'S Electronicis near you, check out their anime dept. It is larger than most other stores and you will find a better selection.

But it really depends on what kind of stuff you're into. Anime is such a broad subject... the following are a couple of footnotes for ya to keep in mind while looking for anime:
Shonen = Anime or Manga for Boys
Shoujo = Anime or Manga for Girls
Shonenai = Boy/Boy love stories, often non-sexual
Shoujoai = Girl/Girl love stories, frequently non-sexual
Yaoi = Boy/Boy sex stories
Yuri = Girl/Girl sex stories
Hentai = Japanese or perverted stories (basically p*rn in cartoon version)
Ecchi isn't normally seen on it's own, but accompanies the above categories. Basically, if an anime is described as Ecchi, then nudity is involved frequently.
Note that there are more 'types' but this should cover the usual stuff that's out there.
I love Fruits Basket, Azumanga Daioh, COWBOY BEBOP, GTO (Great Teacher Onizuka), Ghost in the Shell, Berserk, Bleach, Ranma 1/2 <--- Ranma is a great comedy to get you started btw. I've introduced a lot of non-anime watchers to that first and they've gotten a bit more involved as opposed to starting with something hardcore like Ghost in the Shell or Metropolis.

It depends on the type of anime you enjoy. Some are great comedy, others are romance stories, others are pure sci-fi, others more martial arts. Whatever you're into, people can recommend titles.
I think Cowboy Bebop is the best, but check out Yu-Yu-Hakusho, Ruroni Kenshin, Full Metal Panic FUMOFFU too. Once you find the type of stuff you prefer, it's easier to narrow it down.

anime as in japanese anime?
You can start collecting the movie animes first, like Howl's moving castle, Totoro, Princess Mononoke, etc.
these are usually more acclaimed but are really nice to watch....
You may also like to start with the light-hearted ones classical japanese anime series which can be quite long...
i usually dun really collect DVDs but rather read the comics first, coz it's really much nicer....the original is better than the adapted right?

personality unique & distinguishing. give the old tale journey to the west a refreshing facelift. if u r religious u might get offended though. keep an open mind. senzo is a handsome fellow. hakkia is gentle & kind. goku is cute. even their pet dragon can be a cool jeep. plus a super duper villian called kuogaiji. yummy!!
