They are in different taxonomic families, so there are several differences... The most commonly known one is that crocs have pointed snouts/jaws (V shaped) while gators' are more rounded (U shaped). The teeth in the lower jaw are exposed in crocs but sheathed in gators. Crocs also have a salt gland that enables them to tolerate more marine habitats. There are SEVERAL species of crocodile found all over the world, while the only species of alligator are the american and chinese (VERY endangered). There are also crocodilians called Caiman, which resemble crocodiles but are more closely related to gators, and gharial which are a family of their own.
Edit... About the eating humans thing... that one I've never heard, but I highly doubt it. How would humans have more salt in their blood than any other animal/mammal??

Crocodiles jaws are hinged so that the mouth opens upward while the alligator's jaws open by way of the bottom of the mouth.
Also.....
American crocodiles can be distinguished from American alligators by their longer, more narrow snouts; and by their lower teeth, which are visible even when the crocodile's mouth is closed.

Quickest way to tell at a glance: a crocodile's teeth stick out when it closes it's mouth and and only a few of an alligator's can be seen when they shut their mouth. Link below has pictures and some comparisons.

I agree listen to snake girl she knows her stuff. But one more thing everyone is overlooking is the location of the eyes. Gators eyes are more on top of the head where a crocs eyes just barely clears the tops of their head. Look at a comparison of the two and you will see what I'm talking about.

there are alot of differences from location crocs can go in salt while gators can only tolerate up to brackish, snout crocs long and narrow gators shorter and wider, also a neat little tidbit of info crocs can eat humans just like any other food while gators can only bite a human not eat them. the salt in our blood poisons them .so in theory if you lose a limb to a gator hang out because he'll spit it back
