Vegas Casino Night.
You can have a company come into have blackjack, Texas hold em etc...
Then the people can trade in their chips at the end of the night for raffle tickets and you can raffle off things like gift certificates to the mall, restaurant, cash. Stuff like that. They do it at my work every year and it is a ton of fun.

You need to be very careful in this age of cultural sensitivity not to call it a "Christmas" party, you can call it a "holiday party" or "end of year" party, or some such. Depends on the venue. How many attendees, formal or informal. Where will it be held? At the office? How much money is being spent? Is it potluck or sit down dinner?
Need more info.
Oh, I just read the posting below and think the charity theme is delightful.

Assuming that "Christmas" is off limits, how about a game show theme. You could have multiple games set up around the room and get mass participation. Or, have a "giving feels good" theme where you have several charities present and after eating the employees could give wrapped presents to the charity of their choice. Last idea; how about a support the troops theme and have employees participate in making up care packages and making cards for our soldiers deployed during the holidays.

The original people who celebrated Christmas was Sun worshipers and they had an orgy. So probably naked pole dancers and lots of alcohol. Because they all got sloppy drunk.
Throw in a few ancient myths about Jolly fat men and that should wrap it up;.
