I have read many, and Timothy Zahn definitely writes the best ones. He has a trilogy set after Return of the Jedi that is really worth checking out.

Since those are written by many different authors and there are many different time periods in them as to where the story occurs in relation to the movie that in some ways it is just personal preference. Personally, I would avoid reading Star Wars (New Hope) and the original trilogy. Anything with George Lucas as the primary author avoid. It is a drudgery to read through. Now, I love the original trilogy movies, but the books are not worth the effort of bad writing. I have read about two or three books set after the movie...and I have read about six or seven books in the New Jedi Order series featuring their kids. I loved the New Jedi Order series. Thought they were very exciting, and the ones I read were high quality. I checked them out of the library, so I was only able to read select ones...but I've read enough of them to know that they're good enough to honestly recommend to another person. I'm not that familiar with the ones that come before the New Jedi Order series...just a random selection picked up at 50 cents to a $1 here or there.

The original trilogy of A New Hope, Return of the Jedi, and The Empire Strikes Back shows a lot more to the story in the books than the movies do.

I haven't yet read any, but I have a friend who is a self-professed book snob and would normally never read anything based on a movie...but raves about Timothy Zahn's Star Wars novels. (I have read some of Zahn's Conqueror books and I have to say, the man is an excellent writer...)

Shadows of the empire first. (it takes place between episode 5 and 6) Then the Han solo trilogy (Paradise snare, the hutt gambit, rebel dawn)
Next go for the X-wing series
Then read the thrawn trilogy
Once your done with that get the jedi acadamy trilogy,
then read i jedi
That ought to keep you buisy for awhile
