I think we'd all like to be more adept at something other than what we know and/or have learnt already. Personally i like to be more intelligent, more self-confident, more skillful, more artistic, more articulate, more......the list goes on.
One basic human instinct is self-improvement, we constantly strive to better ourselves, or at least we should. Ultimately I would love to possess good literary and communication skills because I'm a good thinker but find the transition between putting thoughts into coherent sentences, or expressing myself clearly, gets lost in the translation, from brain to paper or spoken words.(Just like this answer)

to be able to paint, there are so many wonderful sight in the world I would love to be able to put my own interpretation of these sights on to canvas. When I visit an art gallery I am always amazed at how the artists have captured the moment. I know it is easily done with a camera, but to have the skill to use a paintbrush would be awesome

I'd love to be either a really good artist, watercolours, oils and sculptures, because I'm greedy like that, or a really good ballroom/Latin American dancer. But I have no desire to compete really, so probably if I chose one it would be art. I am a classical singer and get a lot of compliments about my voice, but I would trade that to be able to paint and draw as well as I can sing, especially as no-one makes you get on a stage and paint a picture in a posh frock in front of 500 people.

Play the Piano.
I loved to hear Russ Conway and Mrs Mills playing on the Radio in the late 50s ( well I am 50) but my parents would not let me learn so I sang in the choir, played Brass, and now conduct a Brass Band and arrange music, including arranging tunes taken from CD or sung to me but I missed the window to learn how to play keyboards to simultaneously play bass with the left hand melody with right and somehow fill in those chords, and to simultaneously read bass clef and treble. And It is not my fault, and I am now too old and decrepit to learn,

I'd love to be more athletic. I'm quite talented in all kinds of art (dancing, singing, acting, playing the piano and drawing), though I'm not good at all at sports, unlike most of my friends.

Singing. I was a professional saxophonist, and play many other instruments as well. But my singing voice sucks. My saxophone vibrato is among the best, but I can't conjure one for singing. I would really like to be able to sing. You asked only for one, but I'd also like to be able to dance. Suck at that, too, as is often the case with musicians.

I would love to be able to sing, with that kind of passion,ability and sincerity that makes the hair stand up on peoples necks when they hear it.
Alas it was not meant to be and the only hair that stands up when I sing is on the dogs back as he howls.

I'd follow you on the guitar and piano. I am a pretty decent singer, but it sucks that I can't accompany myself on an instrument.
