Try Sure Gel or any pectin. Sometimes you don't have enough sugar in the jelly. That will affect the outcome.

Is there anything more infuriating than that? I made blackberry freezer "jam" about a month or so ago that never jelled--all that work for nothing. I followed the instructions exactly, so I conclude there was something wrong with my box of pectin (though it's the same brand I've always used). There isn't really anything you can do to fix this batch. You said it's more like syrup--can you think of a use for muscadine syrup? Maybe try pouring some over some ice in a tall glass and adding some club soda for a muscadine "spritzer". And if it's any good, see if you can fob some off on family and friends--I gave mine away as blackberry ice cream topping. :)

There is a produce called Sure-gel (not sure of the spelling). It may help. You would find it in the grocery store section with the canning supplies.
