You can make a right nifty plum wine.
If you have a good amount, head down to the local homebrewing store and have the salesperson set you up with all you'll need for making the wine.
To start off with, you'll need a bucket for a fermetor, some sanitizer, campden tablets, yeast, and an airlock. Once you get the fermentation off and bubbling, talk to the homebrew people about what you'll need for the following steps.
