I use my own recipe but it is basically the same as the one I saw on Paula Deen's show:
Macho Nachos Recipe courtesy Paula Deen
Difficulty: Easy
Prep Time: 10 minutes
Cook Time: 7 minutes
Yield: 12 servings
1 can refried beans
1 large bag white corn tortilla chips
1 medium onion, chopped
1 cup shredded pepper jack
1 jalapeno, sliced crosswise, plus extra for garnish - or jarred jalepenos
1 can chili, or your favorite chili recipe (of taco seasoned ground beef, or shredded beef or shredded chicken, whatever you are in the mood for)
1 cup shredded Cheddar
1 cup sour cream
1 cup green onion, chopped
1 tomato, diced
Other optional toppings: sliced olives, chopped avocado, juacamole, whatever you like on your nachos)
Have all the prepped ingredients easily accessible to assemble nachos.
Preheat the oven to 350 degrees F.
In a small saucepan over low heat, cook refried beans until they are loose enough to spoon onto nachos. On a large ovenproof platter, spread out a layer of tortilla chips and quickly put a teaspoon of hot refried beans on each chip. Working quickly, sprinkle with some onions, jack cheese, and jalapeno slices.
Spoon on chili and top that with Cheddar. Repeat this layering process until ingredients are used up. Save some of the jalapeno slices for garnish. Place platter in the oven and bake until cheese has melted, about 5 to 10 minutes. Remove from oven and place on a trivet or heatproof surface. Top nachos with sour cream, green onions, diced tomato, jalapeno slices and whatever other optional topping you choose and serve hot.
Note: another good serving option is just before serving and topping with any cold toppings, pour heated cheese sauce (premade in a jar at the grocery) over the nachos, then add the toppings. This is closer to my favorite Mexican restaurant where the nachos are cheese overload!! Mmmm.

Get the old paso nacho pack it comes with its own salsa which is absolutely divine, if you want you can shallow fry some chicken then add the salsa on top , leave to simmer until chicken is cooked , lay the nachos in a baking tray spread the chicken on top then grate some Cheddar cheese on top place in oven for 10-15 min serve with sour cream and chives dip ummmmmmmmm

Taco-Nacho Pizzas
Ingredients
16 Texas white rolls
1 lb. lean ground beef
1 packet taco seasoning mix
1 lb. canned refried beans
1-2/3 cups salsa
1 cup sliced ripe olives
3 cups tortilla chips, crushed
3/4 cup enchilada sauce
2 cups Colby Jack Cheese, grated
Instructions
Allow rolls to thaw and rise according to package directions. Preheat oven to temperature 350°F. Cook ground beef with taco seasoning according to the directions on the packet. Flatten each roll into a 5 inch circle. Place circles on baking sheets sprayed with nonstick cooking spray. Combine ground beef mixture, beans and salsa in a bowl. Spread on circles, and add olives. Toss taco chips with enchilada sauce and spoon on pizzas. Top each pizza with grated cheese. Bake 20 minutes or until edges are lightly browned.

Fork tacos can be made with nachos in place of taco shells; ground beef; lettuce; tomatoes; cheese; and taco sauce. Takes about 15-20 minutes to brown the meat and cut up the lettuce and tomatoes (and onions if you like). Layer with nachos at the bottom, then meat, lettuce, tomatoes, (onions), cheese, and taco sauce. Makes a hardy quick meal!

Deluxe Nacho Potato Skins
1 lb. ground beef
1/2 c. water
1 (4 oz.) can chopped green chilies, undrained
1 tsp. chili powder
1/2 tsp. ground cumin (optional)
1 medium tomato, chopped
2 pkgs. (10-12 oz. each) frozen potato skins
1 c. shredded Cheddar cheese
1 envelope Lipton Recipe Secrets Onion Soup Mix
Preheat oven to 425 degrees. In 10-inch skillet, brown ground beef
over medium-high heat; drain. Stir in onion soup mix, water, chilies,
chili powder, cumin and tomato. Simmer, stirring occasionally, for 10
minutes. In shallow baking pan, arrange potato skins; evenly top with
ground beef mixture, then cheese. Bake uncovered 10 minutes or until
potato skins are done and cheese is melted. Serve, if desired, with
sour cream and guacamole. Makes about 30 potato skins.
Microwave Directions: In 2-quart casserole, microwave ground beef,
uncovered, at high (full power) 4 minutes, stirring once; drain. Stir
in onion soup mix, water, chilies, chili powder, cumin and tomato.
Microwave uncovered 4 minutes, stirring once. In 2-quart oblong baking
dish, arrange 1/2 potato skins; evenly top with 1/2 ground beef
mixture. Microwave uncovered 5 minutes, rearranging potatoes once. Top
with 1/2 cheese, then microwave 1 minute or until cheese is melted;
repeat with remaining potato skins. Serve warm and, if desired, as
above.

Shredded monterey jack and cheddar, diced tomatoes, sliced olives, diced onions, jalapenos, homemade guacamole and light sour cream (as if the sour cream being light helps with all that cheese). Yum!
