Freeze the balls of ice cream really hard. (now, don't get me started.) Cut sponge cake in long but rather wide stips, and cover the ice cream. Make sure it is all covered. FInally, dip it in egg batter and fry.

make balls of ice creams, i prefer vanilla, and freeze them for a couple hours. make sure the ice cream is packed really tight. then mix together an egg a little milk, some cinnamon, some sugar and crushed up corn flakes. take the frozen balls of ice cream and roll them in the mixture. refreeze the ice cream and repeat again if you want. Get a pan and put about a 1/4 inch of oil in it. get the oil hot enough that when you throw a piece of corn flake in there it fries right away. drop balls in oil and move them around to get all sides. should take about 10 or 15 seconds. serve warm, or refreeze after frying. i like to top them with strawberries and whipped cream. i also use frosted flakes rather than regular corn flakes.

INGREDIENTS:
1 quart vanilla ice cream
3 cups crushed cornflakes cereal
1 teaspoon ground cinnamon
3 egg whites
2 quarts oil for frying
--------------------------------------------------------------------------------
DIRECTIONS:
Scoop ice cream into 8 - 1/2 cup sized balls. Place on baking sheet and freeze until firm, about 1 hour.
In a shallow dish, combine cornflakes and cinnamon. In another dish, beat egg whites until foamy. Roll ice cream balls in egg whites, then in cornflakes, covering ice cream completely. Repeat if necessary. Freeze again until firm, 3 hours.
In deep fryer or large, heavy saucepan, heat oil to 375 degrees F (190 degrees C).
Using a basket or slotted spoon, fry ice cream balls 1 or 2 at a time, for 10 to 15 seconds, until golden. Drain quickly on paper towels and serve immediately.

scoop ice cream into a tennis size ball, freeze them so they become VERY hard. you can then roll them in a mixture of frosted flakes or rice crispies then drop them into deep fryer, until crispies become golden brown bring them out pat dry and plate them up.
I prefer vanilla or coffee anything else may bee too over the top.
