Chili without beans, such as what we get here in Cincinnati.

I'm not sure if you are asking for an opinion or a recipe so I'll give you both.

My favorite is a mock version of Coney Island chili...which is not really a chili, but a meat sauce:

Coney Dog Sauce
1lb ground beef
¼ cup shortening
1 cup fine chopped onions (1 medium)
1 glove fine chopped garlic (or garlic powder)
1 T chili powder
1 t paprika
1 teaspoon black pepper
1 t cumin
¾-1 t Italian season (?)
1 t salt
1 t white vinegar
1 t Worcester
1 t sugar
1 t dry mustard

Soak beef for 2-3 hours in water. Remove from water and cook with shortening, onion and about 1 cup of the soaking liquid. Add seasonings. Cook off water.

My Dad's chili is best!

DAD’S FABULOUS CHILI
(Recipe for his easy, but scrumptious chili.)

3 lb. ground chuck
1 lg. pkg. William’s Chili Mix
3 cans Bush’s Chili Beans
1 lg. onion, diced
2 cans tomatoes, diced
salt & pepper, to taste

Brown meat & onion in skillet, & drain the grease. Add chili mix (your choice of styles—Cajun is especially good if you like spicy), stir well, & let simmer 2 or 3 minutes. In large pot heat chili beans, tomatoes, salt & pepper, & about 2 cans of water. Add meat mixture to pot, stir, cover & cook over medium heat for about 15 to 30 minutes, stirring occasionally.

My variation: a can of RO*TEL may be added for more spiciness.
