What is that? It grosses me out to make an egg. I have to pick it out before cooking. Does anyone else hate that thing?

I like the rooster juice answer, but no it isn't really that. Most hens never touch the ground I am told, let alone have a sex life.

It's the chalaza.

It acts an an anchor, suspending the yolk in the middle of the egg.

Fresher eggs have a more prominent chalaza, it weakens as the egg ages.

It's why free range eggs ( the brown ones in the store - from the chickens that DO touch the floor!) taste so much better than the dinky white ones!!

That's probably part of the albumen. When you cook the eggs, it all turns white so you have nothing to worry about.
