4 Tbsp. PLANTERS Peanut Oil, divided
1 egg, lightly beaten
1/4 cup PLANTERS Sliced Almonds
2 Tbsp. green onion slices
1 clove garlic, minced
3 cups cooked MINUTE White Rice, chilled
1 can (8 oz.) peas, drained
1 can (8 oz.) sliced water chestnuts, drained
1 jar (2 oz.) sliced pimientos, drained
3 Tbsp. soy sauce
1/2 tsp. sugar
HEAT 1 Tbsp. of the oil in large skillet or wok. Add egg; stir-fry 1 to 2 minutes or until set. Remove egg from skillet; cover to keep warm.
ADD 1 Tbsp. of the remaining oil to same skillet; heat 30 seconds. Add almonds, green onions and garlic; stir-fry 2 to 3 minutes or until almonds are lightly toasted. Remove from skillet. Heat remaining 2 Tbsp. oil in same skillet. Add rice; stir-fry 3 minutes.
RETURN egg and almond mixture to skillet. Add peas, water chestnuts, pimientos, soy sauce and sugar; mix well. Cook until heated through, stirring constantly.

1 Tbsp. oil
3 eggs, lightly beaten
2 cups water
1 pkg. (16 oz.) frozen stir-fry vegetables, thawed
1/4 cup soy sauce
1 chicken bouillon cube
2 cups MINUTE White Rice, uncooked
HEAT oil in large skillet on medium heat. Add eggs; cook until set, stirring occasionally. Remove from skillet.
ADD water, vegetables, soy sauce and bouillon to skillet; bring to boil. Stir in rice; cover. Remove from heat. Let stand 5 minutes.
STIR in cooked eggs. Serve immediately.

What kind of rice? Fried rice? Porridge? Rice cake? Regular rice? Pick one!
If it's fried rice, believe me, it doesn't have to be fancy or anything. Plain fried rice has cooked eggs, rice, a little soy sauce (some places use sesame oil, but that just makes it taste a little weird unless you like the taste of it), salt, MAYBE some MSG, and whatever desired cooked veggies.
You simply cook the eggs first, scramble them until their ALMOST done, then add in the rice (MAKE SURE IT'S ALREADY COOKED!!!!!!!!! Preferably in a rice cooker), incorporate it, add in about a table spoon of soy sauce (or however much you want), and add salt depending on how much soy sauce you used (soy sauce contains a load of it, for low-sodium ones, you might want to add a little salt). If you're going to add veggies in it, precook the veggies, set them aside, THEN cook the eggs and rice then add the cooked veggies.
Don't listen to the people who say to make sure it's cold, that will just make it harder for you to break apart the rice and incorporate it, by the time the eggs are incorporated, the chances are they'll be slightly burnt. If it's just cooked rice, let it sit until it's still sticky but a lot drier and not really wet. If you're rice is yellow, add a little more until it's light brown. If it's yellow, the soy sauce would make no difference and would be pointless in adding it in the first place. If you don't feel like pre-cooking meats or veggies, just add some cold cuts to the fried rice, still yummy!
I tend to fry it until the rice is somewhat crisp and not soft and mushy like the restaurants or like how non-Asians cook it. There's a reason it's called FRIED RICE! If it's not somewhat crispy (like half the amount of rice should be somewhat crispy but still a little soft on the inside, and yes it is possible within a grain of rice), it's honestly the same as stirring in your cooked ingredients, along with oil, with the rice and that is plain retarded.

Fried Rice This recipe is really quick to make, and actually quite good. More filling if you use the tofu, but that is very optional. I doubt this is very authentic, (as if western chinese food is very authentic anyway!) but it is tasty. I tend to add kelp to things, because I use a miniral salt that is non iodised and kelp is very high in iodine.
Ingredients: (approximate amounts)
1 cup cooked white rice
1 carrot
1/4 cup frozen peas
1/4 cup frozen corn
1/4 block extra firm tofu (optional)
1 egg
Dash cayenne
Dash kelp powder (optional)
Salt to taste
Oil for frying
Method:
Wash, peel if you want, and dice the carrot. Grate the tofu if using.
Heat oil up in a frying pan. Add rice, carrot and tofu and stir constantly for 30 seconds. Add peas, corn and spices. Stir for another 30 seconds, making sure that rice isn't sticking to the bottom of the pan.
Add egg and stir rapidly until egg is cooked. Adjust seasonings.

Fried Rice
Ingredients:
4 cup cooked converted or parboiled rice (1 cup uncooked)
1 cup frozen peas, thawed
4 tablespoons finely grated carrot
2 x eggs, beaten
1/2 cup diced green onion
1 1/2 tablespoons butter
2 tablespoons soy sauce
salt
pepper
Method:
Cook rice following instructions on package (Bring 2 cups water to a boil, add rice and a dash of salt, reduce heat and simmer in covered saucepan for 20 minutes). Pour rice into a large bowl to let it cool in the refrigerator. Scramble the eggs in a small pan over medium heat. Separate the scrambled chunks of egg into small pea-size bits while cooking.
When rice has cooled to near room temperature, add peas, grated carrot, scrambled egg and diced onion to the bowl. Carefully toss all of the ingredients together. Melt 1 1/2 tablespoons of butter in a large frying pan over medium/high heat.
When butter has completely melted, dump the bowl of rice and other ingredients into the pan and add soy sauce plus a dash of salt and pepper. Cook rice for 6-8 minutes over heat, stirring often.
This fried rice can be prepared ahead of time by cooking the rice, then adding the peas, carrots and egg plus half of the soy sauce. Keep this refrigerated until you are ready to fry it in the butter. That's when you add the salt, pepper and remaining soy sauce.

when I eat rice.. I love ONLY Chinese style.. I was in China for several years and I lived on their way of doing it. But actually it is a fried rice version. When the rice is cooked, I, on the side, have fried egg chopped into small bits, and bacon fried crisp and then into small pieces, water chestnut chopped into small pieces or even nuts.. mix it all together into a skillet and fry it but not a HOT heat.. just to get it all warm

firstly cook the rice in a rice cooker... after that cool it for abt 1 hr,(to prevent it from turning out too soft) next you stir fry some garlic till fragrant, add in some sliced/minced meat and stir fry tilll half cooked, add in the rice, stir fry add some light soy sauce till yellow in colour, next open a few pits in the rice, break the 2 eggs into the rice, mix in the rice till equal, place in some crab meat and chick peas, stir fry till crab meat is cooked, parsley for garnish
the meat has to be marinated with sesame oil, light soy sauce, and some garlic powder(black and brown pepper if preferred is additonal) and some rice wine....

Fried Rice with Ham
Serves 4.
3 large eggs, lightly beaten w/ 2 tsp. waer
2 Tbsp vegetable oil, divided
½ tsp. toasted sesame oil
Coarse salt to taste
4 green onions, thinly sliced diagonally (both white and green parts)
4 garlic cloves, minced
5 oz. ham, thinly sliced and chopped (can also used cooked chicken, pork, or shrimp)
4 cups cold cooked rice
3 Tbsp. rice vinegar
1 cup frozen peas, thawed
In a large nonstick skillet, heat 1 Tbsp. oil, swirling to coat. Beat eggs, with 2 tsp. water and ½ tsp. coarse salt. Cook in skillet, moving cooked eggs aside gently to allow raw eggs to run in their place, about 2 minutes. Transfer to plate; when cool enough to handle, cut into strips.
In same skillet, heat remaining Tbsp. oil and sesame oil. Add garlic and scallions, heat and stir until fragrant, about 1 minute. Add ham and rice, season with salt, and cook until very hot, stirring often, about 5 minutes. Add vinegar, peas, and eggs, cook until very hot, about 2 minutes.

1/2 C. leftover meat (any kind will do or

1 Small diced onion
1 Can bean sprouts
3 C. cooked long grain rice
1/4 C. soy sauce
1 egg
green onion -- chopped in 1/4 to
1/2-inch pieces
In a wok or large cast-iron pan (electric frypan will do) over high heat (350 degrees), cook for 2 to 3 minutes, bacon and
leftover meat.
Add onion and bean sprouts; cook about 1 minute more. Add long grain rice (prior to frying rice, wash until water is clear)
and fry until hot; reduce temperature if
necessary.
Add soy sauce while rice is frying.
(Dark soy sauce adds color, but not much salt; light soy sauce adds little color, but is more salty.)
Break up egg and fry until hard.
Set aside and cut into strips to use as garnish on top of rice.
Also garnish with green onion.
Fried rice in a Chinese family is a lunch dish, not a dinner dish; but I'm not Chinese and enjoy it anytime.
If you reduce the temperature to simmer or warm when complete, fried rice will hold well until ready to serve.
Wonderful and worth making!
