First of all, if you can afford a computer and an Internet connection, you can not possibly be poor. I would suggest to you to apply the power of positve thinking and imagine yourself to be terribly rich, in culture, in thoughts, and in your outlook toward the world. The most interesting thing about being poor is that in a young marriage, it can actually bring two people together, more closer than they can possibly imagine. SO think positive for a start.
Getting back to your desire for Yummy meals on a "limited budget": You would be amazed at what a wonderful investment a WOK can be. Most people have the wrong idea about cooking with a WOK. They think that its only for Chinese food.
If you have never owned a wok, then my first suggestion is to go an invest in one. It will stay with you for a life time. The best part about the WOK is the older it gets the better the meals become.
I wont bore you to death by giving you all the recipes I know. However you should know the basic principles of WOK cooking. Simple, Good tasting meals, Every meal will be full of nutrition, and NO waste.
You will use a lot of vegetables. Besides different tastes, most Vegetables, are good for fiber and vitamines. You can eat as much as you want without worrying about getting fat. Also, vetetables are not very explensive. The vegetables will retain their natural juices, and nutrients, and add to the flavour of the meal.
Because you are using a lot of vegetables, you will discover that you don't need to use large quantities of meat. When its all sliced, or cubed, you will understand what they mean by, "little is more." As most meats are expensive, your money will go a long way. For example, you can make a meal for two people with just an 8 oz piece of steak, or chicken, or pork, or even fish. As your are using less meat, you are going to eat less fat too.
Cooking with a WOK is very simple and fast. You will also have plenty of fun planning for your daily menu, shopping for your meals, preparing the meats and the vegetables, and then actually cooking. You can experiment with so many neat things and they are all guaranteed to come out tasting perfect,
You can cook practically any meal using a WOK. Its not only for Chinese food, believe me.
The best part of a WOK is the cleaning up after the meal. No soap, no scrubbing. You just rinse it with some warm water, dry it, and put it away. This allows you to keep "seasoning" it more and more for the next meal.

I know that rice, pasta, and potatoes are cheap and filling, but a lot of starch is going to play heck on your health. Meat is expensive, but if you use cheaper cuts and slow cook them with good seasoning, it'll save you money.
When my husband and I were in college a LOT of years ago, we had a weekly food budget of about $20 (back in the mid 70's.) I learned that vegetarian meals were a good healthy alternative to a meat-heavy diet. I also got to be very good friends with Mr. Freezer and Mr. Pressure Cooker. We'd buy veggies when they were cheap and preserve them for winter.
Hit the double coupon days, learn what products are good at places like Aldi's, and be creative. We survived and were in good shape at the end of the four years.
Good luck to you and your new spouse. . .you're not "poor," you're just financially challenged at the moment. It'll pass and you'll be able to handle whatever challenges may come.

That was an uncalled for remark that soothsayer made. Just ignore that. She was right about the mushroom soup, though. You can pour it over chicken in a baking dish, cover with foil and bake on 350 for about an hour. Delicious with mashed potatoes and a vegetable. It's also good with pork chops. Somebody else suggested ground turkey and that is a very good idea. Use it anywhere you would hamburger meat. You can tell I've been there. Good luck!!!

We eat cheap a lot!!! Try some of these:
brown 1 pound of hamburger meat, drain grease, prepare a box of mac and cheese per package directions, mix prepared mac and cheese with browned meat and add one can of tomato soup, heat til soup is warm and serve.
home made soup will last for a couple of days, as will chicken and dumplings.
also potato soup is really cheap and easy to make, just peel and cube potatoes, boil them in enough water to cover them and when they are done, do not drain water off just add evaporated (canned) milk and butter. Heat til butter is melted and milk is warm, serve as is with salt and pepper, garlic salt or shredded cheese and bacon bits on top.
Spam is cheap and can be baked with carrots and potatoes or you can fry it and serve it with veggies and bread.
Salmon patties, canned salmon, drain the liquid, remove any skins and bones, add an egg and a little flour, cornmeal or bread crumbs. Form into patties and brown on both sides in a fry pan in a bit of oil.

The best trick my mum taught me was to pad everything out with vegetables. If you go to the market at the end of the day, the veg is usually cheaper. Whatever you cook, add lots of vegetables, they are cheaper than meat.
1 lb of Minced (ground if you are American) meat can stretch to 3 or 4 meals for 2 people, divide it up and make shepherds pie one day, burgers the next, spaghetti bolognese another day, etc, etc, just remember, whatever dish you make, lots of veg.

Add drained washed canned kidney beans to sweet canned corn. Add salt and pepper, microwave and serve with white or brown rice.
Also try sauteeing a tomato and a white onion with hot sauce and add a can of tuna fish. Serve over white or brown rice. Sounds weird but is very good and healthier than tuna and mayo.

Chicken for the King
Note: requires overnight prep
5 whole boneless chicken breasts
1 Cup sour cream or plain yogurt
1.5 tsp Worcestershire sauce
1/4 tsp hot-pepper sauce
1 garlic clove (minced)
½ tsp paprika
1 tsp salt
1 tsp thyme
dash soy sauce
3 Tbl butter
1 cup fine plain bread crumbs
Directions
• In bowl: combine sour cream (or yogurt), Worcestershire sauce, hot pepper sauce, garlic, paprika, salt, thyme and soy sauce.
• Slice each breast horizontally into two pieces. Remove skin if desired. Place the chicken in large baking dish.
• Pour marinade over chicken and store in refrigerator for 24 hours.
• Preheat oven to 325 degrees.
• Remove chicken from marinade and blot excess.
• Lay each piece flat on a cutting board, place a pat of butter in center, and tuck chicken into itself as if folding a letter. Roll in bread crumbs, shaking off excess.
• Arrange chicken in 8 inch square baking dish. Bake uncovered for 45 to 55 minutes

Rice with sauteed veggies...just add a little soy sauce! Also, pasta with olive oil is good...just chop up a tomato, and throw it on top! Quesadillas are cheap and SO easy! Be creative with simple ingredients. Rice, pasta, cheese, veggies, tortillas...you can make a million things just from those ingredients!
