8 oz bittersweet or semisweet chocolate, cut into pieces
4 large eggs
½ tsp salt
1 cup granulated sugar
1 cup firmly packed dark brown sugar
2 tsp vanilla extract
1 cup all purpose flour (4 oz)
One 13 X9X2 inch pan, buttered and lined with parchment - let parchment hang over ends for easy removal
Directions
• Set rack in middle of oven and preheat at 350 degrees
• Bring a saucepan of water to boil. Remove from heat. Set heatproof bowl with butter an chocolate over pan of water. Stir occasionally until melted and combined. Let cool for around 5 minutes.
• Whisk eggs together in large bowl, then whisk in salt, sugars, and vanilla. Stir in chocolate mixture then fold in flour (when adding flour, add a bit at a time, shaken over top of wet ingredients to avoid lumps.
• Pour batter into prepared pan, spread evenly. Bake for 45 minutes until top has formed, shiny and crusty - moderately firm - don’t over cook (yuck)
• Cool in pan on rack, keep at room temperature or refrigerate until next day
• Freeze in plastic zip bags for up to 3 months

Directions:
